Description

These savory cookies are a delicious twist on traditional spanakopita, combining spinach and feta in a crispy cookie form.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the chopped spinach and crumbled feta cheese.
  3. In another bowl, cream the softened butter and add the egg, beating until smooth.
  4. Gradually add the flour, baking powder, salt, and pepper to the butter mixture, stirring until combined.
  5. Fold in the spinach and feta mixture into the dough.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
  7. Bake for 12-15 minutes or until golden brown.
  8. Allow cookies to cool on a wire rack before serving.

Notes

These cookies are best served warm and pair well with yogurt dip. Store leftovers in an airtight container for up to 3 days.
