- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the chopped spinach and crumbled feta cheese.
- In another bowl, cream the softened butter and add the egg, beating until smooth.
- Gradually add the flour, baking powder, salt, and pepper to the butter mixture, stirring until combined.
- Fold in the spinach and feta mixture into the dough.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
- Bake for 12-15 minutes or until golden brown.
- Allow cookies to cool on a wire rack before serving.
