  • Author: Chef Lalybeth

Description

A delightful and easy-to-make appetizer featuring creamy ricotta and savory spinach, baked to golden perfection.

Ingredients

Scale

For the Crust:

  • 1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup whole milk ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Italian breadcrumbs

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with parchment paper.
  2. In a large mixing bowl, combine the spinach, ricotta, Parmesan, egg, garlic, onion powder, nutmeg, salt, and pepper. Mix until well combined.
  3. Using a small cookie scoop or a spoon, fill each muffin cup with the mixture, pressing down gently. Sprinkle the top of each bite with breadcrumbs.
  4. Bake for 20-25 minutes, or until the edges are golden brown and the bites are set. Let them cool in the pan for 5 minutes before removing. Serve warm.
