For the Crust:
- 1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
- 1 cup whole milk ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg, lightly beaten
- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup Italian breadcrumbs
Instructions
1. Prepare the Crust:
- Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with parchment paper.
- In a large mixing bowl, combine the spinach, ricotta, Parmesan, egg, garlic, onion powder, nutmeg, salt, and pepper. Mix until well combined.
- Using a small cookie scoop or a spoon, fill each muffin cup with the mixture, pressing down gently. Sprinkle the top of each bite with breadcrumbs.
- Bake for 20-25 minutes, or until the edges are golden brown and the bites are set. Let them cool in the pan for 5 minutes before removing. Serve warm.
