Description

A cozy and healthy soup made with fresh spinach, white beans, and flavorful meatballs, perfect for a delicious meal.


Ingredients

  • 1 pound ground turkey
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 cups fresh spinach leaves
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a bowl, mix ground turkey with Italian seasoning, salt, and pepper. Form into meatballs.
  2. Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until softened.
  3. Add meatballs to the pot and brown on all sides.
  4. Pour in chicken broth and add white beans. Bring to a simmer.
  5. Add spinach and cook until wilted. Season to taste.
  6. Serve hot.

Notes

For a vegetarian version, substitute ground turkey with plant-based meatballs.
