- 1 pound ground turkey
- 1 can (15 oz) white beans, drained and rinsed
- 2 cups fresh spinach leaves
- 1 onion, diced
- 2 garlic cloves, minced
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a bowl, mix ground turkey with Italian seasoning, salt, and pepper. Form into meatballs.
- Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until softened.
- Add meatballs to the pot and brown on all sides.
- Pour in chicken broth and add white beans. Bring to a simmer.
- Add spinach and cook until wilted. Season to taste.
- Serve hot.
Notes
For a vegetarian version, substitute ground turkey with plant-based meatballs.
