Description
A spicy and sweet salmon bowl featuring tender salmon glazed with sriracha and honey, served over rice or veggies.
Ingredients

- 1 1/2 pounds salmon fillets
- 1/4 cup honey
- 2 tablespoons sriracha sauce
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- For the bowls:
- 2 cups cooked rice
- 1 cup shredded carrots
- 1 cup cucumber slices
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
- In a small bowl, whisk together honey, sriracha, soy sauce, lime juice, and minced garlic.
- Place salmon fillets on the baking sheet, brush with olive oil, and season with salt and pepper.
- Pour the sriracha honey mixture over the salmon fillets.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily.
- While the salmon bakes, prepare the bowls by dividing the cooked rice among serving bowls.
- Top the rice with shredded carrots, cucumber slices, and avocado.
- Once the salmon is done, place it on top of the bowls and garnish with fresh cilantro.
- Serve immediately.
Notes
For a spicier version, add more sriracha. This recipe is great for meal prep and can be stored in the fridge for up to 2 days.
