Description

A spicy and sweet salmon bowl featuring tender salmon glazed with sriracha and honey, served over rice or veggies.


Ingredients

  • 1 1/2 pounds salmon fillets
  • 1/4 cup honey
  • 2 tablespoons sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • For the bowls:
  • 2 cups cooked rice
  • 1 cup shredded carrots
  • 1 cup cucumber slices
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together honey, sriracha, soy sauce, lime juice, and minced garlic.
  3. Place salmon fillets on the baking sheet, brush with olive oil, and season with salt and pepper.
  4. Pour the sriracha honey mixture over the salmon fillets.
  5. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily.
  6. While the salmon bakes, prepare the bowls by dividing the cooked rice among serving bowls.
  7. Top the rice with shredded carrots, cucumber slices, and avocado.
  8. Once the salmon is done, place it on top of the bowls and garnish with fresh cilantro.
  9. Serve immediately.

Notes

For a spicier version, add more sriracha. This recipe is great for meal prep and can be stored in the fridge for up to 2 days.
