Ingredients

  • 1 lb flank steak
  • 2 ripe avocados, sliced
  • 4 ears of corn, husked
  • 1 cup fresh cilantro leaves
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400Β°F and roast corn for 15-20 minutes until charred.
  2. Season steak with salt and pepper, then grill over medium-high heat for 4-5 minutes per side for medium-rare.
  3. In a blender, combine cilantro, sour cream, garlic, and lime juice; blend until smooth.
  4. Let steak rest for 5 minutes, then slice thinly.
