Description

Sizzling, flavorful steak fajitas with tender strips of beef, colorful bell peppers, and onions, served warm with tortillas and your favorite toppings.


Ingredients

For the Crust:

  • 1.5 lbs flank or skirt steak, sliced against the grain into thin strips
  • 3 bell peppers (assorted colors), sliced
  • 1 large yellow onion, sliced
  • 2 tbsp olive oil, divided
  • 2 tbsp fajita seasoning (or a mix of chili powder, cumin, paprika, garlic powder, and oregano)
  • Juice of 1 lime
  • 8 small flour tortillas, warmed
  • Optional toppings: sour cream, guacamole, pico de gallo, shredded cheese, cilantro

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the steak strips, 1 tbsp olive oil, lime juice, and fajita seasoning. Toss to coat evenly and let marinate for at least 10 minutes.
  2. Heat the remaining 1 tbsp of olive oil in a large cast-iron skillet or heavy-bottomed pan over high heat. Add the seasoned steak and cook for 5-7 minutes, stirring occasionally, until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.
  3. In the same skillet, add the sliced bell peppers and onion. Cook for 5-7 minutes, stirring frequently, until the vegetables are tender-crisp and slightly charred. Return the cooked steak to the skillet and toss everything together to combine and heat through.
  4. Serve the sizzling steak and pepper mixture immediately with warm tortillas and your choice of toppings.
