Sizzling, flavorful steak fajitas with tender strips of beef, colorful bell peppers, and onions, served warm with tortillas and your favorite toppings.

For the Crust:
- 1.5 lbs flank or skirt steak, sliced against the grain into thin strips
- 3 bell peppers (assorted colors), sliced
- 1 large yellow onion, sliced
- 2 tbsp olive oil, divided
- 2 tbsp fajita seasoning (or a mix of chili powder, cumin, paprika, garlic powder, and oregano)
- Juice of 1 lime
- 8 small flour tortillas, warmed
- Optional toppings: sour cream, guacamole, pico de gallo, shredded cheese, cilantro
Instructions
1. Prepare the Crust:
- In a large bowl, combine the steak strips, 1 tbsp olive oil, lime juice, and fajita seasoning. Toss to coat evenly and let marinate for at least 10 minutes.
- Heat the remaining 1 tbsp of olive oil in a large cast-iron skillet or heavy-bottomed pan over high heat. Add the seasoned steak and cook for 5-7 minutes, stirring occasionally, until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and onion. Cook for 5-7 minutes, stirring frequently, until the vegetables are tender-crisp and slightly charred. Return the cooked steak to the skillet and toss everything together to combine and heat through.
- Serve the sizzling steak and pepper mixture immediately with warm tortillas and your choice of toppings.
