Strawberry Cream Cheesecake

Description

A delicious no-bake cheesecake with fresh strawberries and creamy filling.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

Instructions

  1. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan to form the crust.
  2. In a large mixing bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, mixing well.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Fold into the cream cheese mixture.
  4. Fold in the sliced strawberries gently.
  5. Pour the filling over the crust and smooth the top. Refrigerate for at least 4 hours or until set.
  6. Before serving, garnish with additional strawberries if desired.

Notes

For a firmer cheesecake, chill overnight. Use ripe strawberries for the best flavor.
