Description

Delicious bite-sized cheesecakes with a strawberry crunch topping made from golden Oreos and strawberry gelatin.


Ingredients

  • For the crust: 2 cups golden Oreo cookies, crushed
  • 1/4 cup unsalted butter, melted
  • For the cheesecake filling: 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • For the strawberry crunch topping: 1 cup golden Oreo cookies, crushed
  • 1/4 cup strawberry gelatin powder
  • 2 tbsp unsalted butter, melted
  • Fresh strawberries for garnish

Instructions

  1. Preheat oven to 325°F and line a muffin tin with paper liners.
  2. In a bowl, mix the crushed golden Oreos for the crust with melted butter until combined.
  3. Press the mixture into the bottom of each muffin liner.
  4. In a separate bowl, beat the cream cheese and sugar until smooth.
  5. Add eggs one at a time, then mix in vanilla extract and sour cream.
  6. Pour the cheesecake filling over the crust in the muffin liners.
  7. Bake for 18-20 minutes or until set.
  8. While baking, prepare the topping by mixing crushed golden Oreos, strawberry gelatin, and melted butter.
  9. Once cooled, top each cheesecake bite with the strawberry crunch mixture.
  10. Refrigerate for at least 2 hours before serving, and garnish with fresh strawberries.

Notes

These bites are best served chilled and can be stored in an airtight container in the fridge for up to 3 days.
