Delicious bite-sized cheesecakes with a strawberry crunch topping made from golden Oreos and strawberry gelatin.

- For the crust: 2 cups golden Oreo cookies, crushed
- 1/4 cup unsalted butter, melted
- For the cheesecake filling: 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- For the strawberry crunch topping: 1 cup golden Oreo cookies, crushed
- 1/4 cup strawberry gelatin powder
- 2 tbsp unsalted butter, melted
- Fresh strawberries for garnish
Instructions
- Preheat oven to 325°F and line a muffin tin with paper liners.
- In a bowl, mix the crushed golden Oreos for the crust with melted butter until combined.
- Press the mixture into the bottom of each muffin liner.
- In a separate bowl, beat the cream cheese and sugar until smooth.
- Add eggs one at a time, then mix in vanilla extract and sour cream.
- Pour the cheesecake filling over the crust in the muffin liners.
- Bake for 18-20 minutes or until set.
- While baking, prepare the topping by mixing crushed golden Oreos, strawberry gelatin, and melted butter.
- Once cooled, top each cheesecake bite with the strawberry crunch mixture.
- Refrigerate for at least 2 hours before serving, and garnish with fresh strawberries.
Notes
These bites are best served chilled and can be stored in an airtight container in the fridge for up to 3 days.
