Description

These Strawberry Crunch Cookies are soft, chewy cookies with a delightful strawberry flavor and a crispy topping, perfect for a sweet treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam
  • 1 cup strawberry-flavored cereal, crushed for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the butter and sugars until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Drop tablespoon-sized balls of dough onto the prepared baking sheets.
  7. Make an indentation in the center of each cookie and fill with strawberry jam.
  8. Sprinkle the crushed cereal on top for the crunch.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store in an airtight container for up to 3 days. For extra crunch, use fresh strawberries if available.
