- 1/2 cup strawberry jam
- 1 cup strawberry-flavored cereal, crushed for topping
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream the butter and sugars until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Drop tablespoon-sized balls of dough onto the prepared baking sheets.
- Make an indentation in the center of each cookie and fill with strawberry jam.
- Sprinkle the crushed cereal on top for the crunch.
- Bake for 10-12 minutes or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
