Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, pureed
  • For the frosting:
  • 1 cup powdered sugar
  • 2 tablespoons strawberry puree
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Fold in the strawberry puree.
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheet.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Allow cookies to cool completely.
  10. For the frosting: Mix powdered sugar, strawberry puree, and milk until smooth, then spread over cooled cookies.

Notes

These cookies are best stored in an airtight container. Use ripe strawberries for the best flavor.
