Description

Soft and chewy matcha cookies with a sweet strawberry frosting made from fresh strawberries and powdered sugar.


Ingredients

  • 1 tablespoon matcha green tea powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, pureed
  • 2 cups powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, matcha powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla extract.
  4. Gradually add dry ingredients to wet ingredients, mixing until combined.
  5. Scoop dough onto prepared sheets and bake for 10-12 minutes. Let cool completely.
  6. For frosting: Mix pureed strawberries, powdered sugar, and milk until smooth. Spread over cooled cookies.
