- 1 1/2 cups granulated sugar
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 2 tablespoons strawberry gelatin mix
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh strawberries, diced
- Powdered sugar for rolling
Instructions
- Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter, cream cheese, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, strawberry gelatin mix, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the diced strawberries.
- Scoop dough into balls, roll in powdered sugar, and place on prepared baking sheets.
- Bake for 10-12 minutes or until edges are lightly golden. Let cool on sheets for 5 minutes before transferring to a wire rack.
