Description

Soft and chewy cookies filled with fresh strawberries and a gooey butter center, perfect for a sweet treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 package (8 oz) cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 tablespoons strawberry gelatin mix
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, diced
  • Powdered sugar for rolling

Instructions

  1. Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, cream cheese, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, strawberry gelatin mix, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the diced strawberries.
  7. Scoop dough into balls, roll in powdered sugar, and place on prepared baking sheets.
  8. Bake for 10-12 minutes or until edges are lightly golden. Let cool on sheets for 5 minutes before transferring to a wire rack.

Notes

For best results, use fresh strawberries and store cookies in an airtight container for up to 3 days.
