Description

Delicious shortbread cookies filled with sweet strawberry jam, perfect for a quick dessert or snack.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam

Instructions

  1. Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture and stir until combined.
  5. Roll dough into 1-inch balls and place on prepared baking sheets. Make an indentation in the center of each ball with your thumb.
  6. Fill each indentation with about 1/2 teaspoon of strawberry jam.
  7. Bake for 12-15 minutes or until edges are lightly golden. Cool on wire racks.

Notes

For best results, use high-quality strawberry jam. Cookies can be stored in an airtight container for up to 5 days.
