Description

Delicious buttery shortbread cookies infused with fresh strawberries for a sweet and tangy treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and finely chopped

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Gradually add the flour and vanilla extract, mixing until a dough forms.
  4. Gently fold in the chopped strawberries.
  5. Roll the dough into 1-inch balls and place them on the prepared baking sheet, flattening slightly.
  6. Bake for 12-15 minutes or until the edges are golden brown.
  7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use ripe strawberries and store cookies in an airtight container for up to 3 days.
