Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry puree
  • 1/4 cup powdered sugar for rolling

Instructions

  1. Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and granulated sugar until light and fluffy.
  4. Beat in egg, vanilla extract, and strawberry puree until well combined.
  5. Gradually add dry ingredients to wet ingredients and mix until a dough forms.
  6. Roll dough into 1-inch balls, then roll in powdered sugar to coat.
  7. Place balls on prepared baking sheets and bake for 10-12 minutes until edges are set.
  8. Allow cookies to cool on the sheets for 5 minutes before transferring to a wire rack.

Notes

For best results, use fresh strawberries for the puree. Store in an airtight container for up to 3 days.
