Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup strawberry puree
  • Fresh strawberries for garnish

Instructions

  1. Preheat oven to 325Β°F (163Β°C) and grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined, then press into the bottom of the pan to form the crust.
  3. In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth and creamy.
  4. Add eggs one at a time, beating well after each addition.
  5. Gently fold in strawberry puree to create a swirl effect.
  6. Pour the batter over the crust and bake for 50-60 minutes or until the center is set.
  7. Allow to cool completely, then refrigerate for at least 4 hours before serving.
