- 2 boneless, skinless chicken breasts
- 2 ears of corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup cotija cheese, crumbled
- 1 tablespoon chili powder
- 1 lime, juiced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook the rice according to package instructions and set aside.
- Grill the chicken breasts seasoned with salt, pepper, and chili powder until fully cooked, about 6-8 minutes per side.
- Grill the corn until charred, then cut the kernels off the cob.
- In a bowl, mix the corn with mayonnaise, sour cream, cotija cheese, and lime juice.
- Slice the chicken and assemble the bowls by layering rice, chicken, and corn mixture.
- Garnish with fresh cilantro and serve immediately.
Notes
For a spicier version, add diced jalapeΓ±os to the corn mixture.
