Ingredients

  • 1 cup uncooked white rice
  • 2 boneless, skinless chicken breasts
  • 2 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup cotija cheese, crumbled
  • 1 tablespoon chili powder
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Grill the chicken breasts seasoned with salt, pepper, and chili powder until fully cooked, about 6-8 minutes per side.
  3. Grill the corn until charred, then cut the kernels off the cob.
  4. In a bowl, mix the corn with mayonnaise, sour cream, cotija cheese, and lime juice.
  5. Slice the chicken and assemble the bowls by layering rice, chicken, and corn mixture.
  6. Garnish with fresh cilantro and serve immediately.

Notes

For a spicier version, add diced jalapeΓ±os to the corn mixture.
