- 2 whole Cornish game hens
- 1 cup bread stuffing mix
- 1/2 cup chopped onion
- 1/4 cup chopped celery
- 2 tablespoons butter
- Salt and pepper to taste
- 1 teaspoon dried sage
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium skillet, melt butter over medium heat. Add onion and celery, and cook until softened.
- In a bowl, combine the cooked vegetables with the stuffing mix and sage. Mix well.
- Season the hens inside and out with salt and pepper. Stuff the cavity of each hen with the stuffing mixture.
- Place the hens in a roasting pan and roast in the preheated oven for 1 hour, or until the juices run clear.
- Let rest for 10 minutes before serving.
Notes
For a crispier skin, baste the hens with melted butter halfway through cooking. Pairs well with roasted vegetables.
