- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 4 ounces brie cheese, sliced
- 1/2 cup fresh or dried cranberries
- 1/4 cup chopped pecans
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Preheat the oven to 400Β°F (200Β°C).
- Wash and slice the sweet potatoes into 1/2-inch thick rounds.
- Brush both sides of the sweet potato rounds with olive oil and season with salt and pepper.
- Arrange on a baking sheet and bake for 20-25 minutes, or until tender.
- Remove from oven and top each round with a slice of brie, a few cranberries, and chopped pecans.
- Broil for an additional 2-3 minutes until the cheese is melted and bubbly.
- Serve warm.
