Description

Delicious sweet potato rounds topped with brie, cranberry, and pecans for a festive appetizer.


Ingredients

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 4 ounces brie cheese, sliced
  • 1/2 cup fresh or dried cranberries
  • 1/4 cup chopped pecans
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat the oven to 400Β°F (200Β°C).
  2. Wash and slice the sweet potatoes into 1/2-inch thick rounds.
  3. Brush both sides of the sweet potato rounds with olive oil and season with salt and pepper.
  4. Arrange on a baking sheet and bake for 20-25 minutes, or until tender.
  5. Remove from oven and top each round with a slice of brie, a few cranberries, and chopped pecans.
  6. Broil for an additional 2-3 minutes until the cheese is melted and bubbly.
  7. Serve warm.
