For the Crust:

  • 16 oz cream cheese, softened
  • 2 cups sharp cheddar cheese, shredded
  • 3/4 cup finely chopped dill pickles, patted dry
  • 1/4 cup pickle juice
  • 1/4 cup fresh dill, chopped
  • 2 tbsp finely chopped red onion
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 cup chopped pecans, for rolling

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the softened cream cheese, shredded cheddar, chopped pickles, pickle juice, fresh dill, red onion, garlic powder, and black pepper. Mix until thoroughly combined.
  2. Lay a large piece of plastic wrap on the counter. Scoop the cheese mixture onto the plastic wrap. Use the wrap to help you form the mixture into a ball shape. Wrap it tightly and refrigerate for at least 2 hours, or until firm.
  3. Place the chopped pecans on a plate. Unwrap the chilled cheese ball and roll it in the pecans until the outside is fully coated. Serve immediately with crackers or refrigerate until ready to serve.
