- 1 pound ground breakfast sausage
 - 2 tablespoons all-purpose flour
 - 2 cups milk
 - Salt and pepper to taste
 - 4 cups frozen tater tots
 - 4 large eggs
 - 1 cup shredded cheddar cheese
 
Instructions
- Preheat oven to 425°F (220°C) and bake tater tots according to package instructions.
 - In a skillet, cook the ground sausage over medium heat until browned and crumbled; drain excess fat.
 - Sprinkle flour over the sausage and stir to combine; cook for 1 minute.
 - Gradually add milk, stirring constantly until the mixture thickens into gravy; season with salt and pepper.
 - In another pan, fry the eggs to your desired doneness.
 - In individual bowls, layer baked tater tots, sausage gravy, fried eggs, and shredded cheese.
 
Notes
For a spicier version, use hot sausage and add cayenne pepper to the gravy.
