Ingredients

  • 1 pound ground breakfast sausage
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • Salt and pepper to taste
  • 4 cups frozen tater tots
  • 4 large eggs
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 425°F (220°C) and bake tater tots according to package instructions.
  2. In a skillet, cook the ground sausage over medium heat until browned and crumbled; drain excess fat.
  3. Sprinkle flour over the sausage and stir to combine; cook for 1 minute.
  4. Gradually add milk, stirring constantly until the mixture thickens into gravy; season with salt and pepper.
  5. In another pan, fry the eggs to your desired doneness.
  6. In individual bowls, layer baked tater tots, sausage gravy, fried eggs, and shredded cheese.

Notes

For a spicier version, use hot sausage and add cayenne pepper to the gravy.
