Ingredients

  • 1 lb pork tenderloin, trimmed
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375Β°F (190Β°C).
  2. Season the pork tenderloin with salt and pepper.
  3. Heat olive oil in a skillet over medium heat and sear the pork on all sides until browned.
  4. Transfer the pork to a baking dish and roast in the oven for 20-25 minutes or until cooked through.
  5. In the same skillet, add onion and garlic; sautΓ© until softened.
  6. Stir in chicken broth, heavy cream, and Dijon mustard; simmer for 5 minutes.
  7. Slice the pork and return it to the skillet, coating it with the sauce.
  8. Garnish with fresh parsley and serve hot.

Notes

For a lighter version, substitute heavy cream with Greek yogurt. Ensure pork reaches an internal temperature of 145Β°F.
