For the Crust:
- 1.5 lbs sirloin steak, cut into 1-inch cubes
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 teaspoon fresh thyme leaves
- 1/4 teaspoon red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- Season the steak bites generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer and sear for 2-3 minutes per side until browned. Remove steak from the skillet and set aside.
- Reduce heat to medium. Add butter to the skillet. Once melted, add the minced garlic and cook for 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Whisk in the grated parmesan cheese until the sauce is smooth and has thickened slightly.
- Stir in the thyme and optional red pepper flakes. Return the steak bites and any accumulated juices to the skillet. Stir to coat the steak in the sauce and heat through for 1-2 minutes. Serve immediately.
