Teriyaki Salmon with Sesame Noodles

Description

A quick and flavorful weeknight meal featuring glazed salmon fillets served over a bed of cold, nutty sesame noodles.

For the Crust:

  • 4 (6 oz) salmon fillets, skin on or off
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil
  • 8 oz soba or udon noodles
  • 2 green onions, thinly sliced
  • 1 tbsp sesame seeds, for garnish

Instructions

1. Prepare the Crust:

  1. Whisk together soy sauce, honey, garlic, ginger, and rice vinegar in a bowl to make the teriyaki sauce. Marinate the salmon in half of the sauce for 10 minutes.
  2. Cook noodles according to package directions. Drain and rinse under cold water. Toss the cooled noodles with the sesame oil and remaining teriyaki sauce.
  3. Heat a skillet over medium-high heat. Add the salmon fillets, reserving the marinade. Cook for 4-6 minutes per side, or until cooked to your liking. Pour the reserved marinade into the pan and let it simmer for 1 minute to create a glaze.
  4. Serve the glazed salmon over the sesame noodles. Garnish with sliced green onions and a sprinkle of sesame seeds.

Notes

You can customize the seasonings to taste.
