- 8 oz penne pasta
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 3 garlic cloves, minced

- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
Instructions
- Cook the penne pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat and cook the chicken slices with salt, pepper, and Italian seasoning until browned and cooked through.
- Add minced garlic and sun-dried tomatoes to the skillet; sauté for 1-2 minutes.
- Pour in the heavy cream and bring to a simmer; stir in the Parmesan cheese until the sauce thickens.
- Add the fresh spinach and cooked pasta to the skillet; toss everything together until well combined and heated through.
- Serve immediately, garnished with extra Parmesan if desired.
Notes
For a lighter version, substitute heavy cream with half-and-half or milk. Ensure chicken is fully cooked to an internal temperature of 165°F.
