Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 8 oz penne pasta
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 3 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and cook the chicken slices with salt, pepper, and Italian seasoning until browned and cooked through.
  3. Add minced garlic and sun-dried tomatoes to the skillet; sauté for 1-2 minutes.
  4. Pour in the heavy cream and bring to a simmer; stir in the Parmesan cheese until the sauce thickens.
  5. Add the fresh spinach and cooked pasta to the skillet; toss everything together until well combined and heated through.
  6. Serve immediately, garnished with extra Parmesan if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half or milk. Ensure chicken is fully cooked to an internal temperature of 165°F.
