- 2 lbs pork shoulder, cut into chunks
- 1 onion, diced
- 4 garlic cloves, minced
- 1 tablespoon cumin
- 1 tablespoon oregano
- Salt and pepper to taste
- 8 large flour tortillas
- 1 cup rice, cooked
- 1 cup black beans, cooked
- 1 cup salsa
- 1 avocado, sliced
Instructions
- Season the pork shoulder with cumin, oregano, salt, and pepper.
- In a large pot, add the pork, onion, and garlic. Cover with water and bring to a boil. Reduce heat and simmer for 2-3 hours until tender.
- Shred the cooked pork using two forks.
- Warm the tortillas in a skillet.
- Assemble the burritos by adding shredded pork, rice, beans, salsa, and avocado to each tortilla. Roll up tightly.
- Serve immediately with additional salsa if desired.
Notes
For a crispier texture, broil the shredded pork after simmering. Pairs well with fresh guacamole.
