Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • Salt and pepper to taste
  • 8 large flour tortillas
  • 1 cup rice, cooked
  • 1 cup black beans, cooked
  • 1 cup salsa
  • 1 avocado, sliced

Instructions

  1. Season the pork shoulder with cumin, oregano, salt, and pepper.
  2. In a large pot, add the pork, onion, and garlic. Cover with water and bring to a boil. Reduce heat and simmer for 2-3 hours until tender.
  3. Shred the cooked pork using two forks.
  4. Warm the tortillas in a skillet.
  5. Assemble the burritos by adding shredded pork, rice, beans, salsa, and avocado to each tortilla. Roll up tightly.
  6. Serve immediately with additional salsa if desired.

Notes

For a crispier texture, broil the shredded pork after simmering. Pairs well with fresh guacamole.
