- 2 pounds beef chuck roast, cut into chunks
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 can (28 oz) crushed tomatoes
- 1 cup beef broth
- 1/2 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Season the beef chunks with salt and pepper.
- In a skillet, brown the beef over medium heat for about 5 minutes.
- Transfer the beef to the slow cooker.
- Add onion, garlic, carrots, celery, crushed tomatoes, beef broth, red wine, tomato paste, oregano, and basil to the slow cooker.
- Stir to combine all ingredients.
- Cover and cook on low for 8 hours or until beef is tender.
- Shred the beef with forks and mix back into the sauce.
- Serve over pasta or with bread.
Notes
For best results, use a good quality red wine. Let the ragu rest for 10 minutes before serving.
