A hearty and flavorful slow cooker beef ragu that’s the ultimate comfort food, perfect for family dinners.


Ingredients

  • 2 pounds beef chuck roast, cut into chunks
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 can (28 oz) crushed tomatoes
  • 1 cup beef broth
  • 1/2 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Season the beef chunks with salt and pepper.
  2. In a skillet, brown the beef over medium heat for about 5 minutes.
  3. Transfer the beef to the slow cooker.
  4. Add onion, garlic, carrots, celery, crushed tomatoes, beef broth, red wine, tomato paste, oregano, and basil to the slow cooker.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 8 hours or until beef is tender.
  7. Shred the beef with forks and mix back into the sauce.
  8. Serve over pasta or with bread.

Notes

For best results, use a good quality red wine. Let the ragu rest for 10 minutes before serving.
