Description

A decadent cheesecake featuring a creamy filling and fresh strawberries on top.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 2 cups fresh strawberries, sliced
  • Strawberry topping: 1 cup strawberry preserves

Instructions

  1. Preheat oven to 325ยฐF (163ยฐC).
  2. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat cream cheese until smooth. Add sugar and vanilla, mixing well.
  4. Add eggs one at a time, beating after each addition. Stir in sour cream.
  5. Pour the mixture over the crust in the pan.
  6. Bake for 55-60 minutes or until the center is set. Cool on a wire rack.
  7. Refrigerate for at least 4 hours. Top with sliced strawberries and strawberry preserves before serving.

Notes

For best results, use fresh strawberries and let the cheesecake chill overnight.
