Description

Ingredients

  • 1 pint fresh oysters, shucked
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 stalks celery, diced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and celery, and sautΓ© until softened, about 5 minutes.
  3. Pour in the milk and cream, and bring to a gentle simmer.
  4. Add the oysters and cook until their edges curl, about 3-5 minutes.
  5. Season with salt and pepper.
  6. Serve hot, garnished with fresh parsley.

Notes

For the best flavor, use fresh oysters. This stew pairs well with crusty bread.
