Ingredients
- For the Crust: 2 1/2 cups all-purpose flour

Instructions
- Preheat your oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the flour and salt for the crust, then cut in the butter until the mixture resembles coarse crumbs.
- Add ice water one tablespoon at a time until the dough comes together; divide into two disks, wrap, and chill for 30 minutes.
- For the filling, in a separate bowl, toss the diced apples with sugar, cinnamon, nutmeg, and lemon juice.
- Roll out the dough on a floured surface to about 1/8-inch thickness and cut into circles using a cookie cutter.
- Place a spoonful of apple filling in the center of each dough circle, fold over to form a half-moon, and seal the edges with a fork.
- Brush the tops with beaten egg and sprinkle with coarse sugar.
- Bake for 20-25 minutes or until golden brown; let cool on a wire rack.
Notes
For a heart-shaped twist, use a heart-shaped cutter for the pies. Store leftovers in an airtight container for up to 2 days.
