  • For the Crust: 1 cup unsalted butter, chilled and cubed
  • For the Crust: 6-8 tablespoons ice water
  • For the Filling: 4 medium apples, peeled and diced
  • For the Filling: 1/2 cup granulated sugar
  • For the Filling: 1 teaspoon ground cinnamon

  • For the Topping: 1 egg, beaten for egg wash
  • For the Topping: 1 tablespoon coarse sugar

Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the flour and salt for the crust, then cut in the butter until the mixture resembles coarse crumbs.
  3. Add ice water one tablespoon at a time until the dough comes together; divide into two disks, wrap, and chill for 30 minutes.
  4. For the filling, in a separate bowl, toss the diced apples with sugar, cinnamon, nutmeg, and lemon juice.
  5. Roll out the dough on a floured surface to about 1/8-inch thickness and cut into circles using a cookie cutter.
  6. Place a spoonful of apple filling in the center of each dough circle, fold over to form a half-moon, and seal the edges with a fork.
  7. Brush the tops with beaten egg and sprinkle with coarse sugar.
  8. Bake for 20-25 minutes or until golden brown; let cool on a wire rack.

Notes

For a heart-shaped twist, use a heart-shaped cutter for the pies. Store leftovers in an airtight container for up to 2 days.
