- 1/2 cup unsweetened cocoa powder

- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup fresh raspberries
- 1/2 cup semi-sweet chocolate chips
- For the mirror glaze: 1 cup water, 1 cup sugar, 2/3 cup sweetened condensed milk, 2 tsp gelatin, 1/2 cup chocolate
Instructions
- Preheat oven to 325Β°F (163Β°C).
- Mix graham cracker crumbs, cocoa powder, and melted butter; press into a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add sour cream, vanilla, and eggs one at a time, mixing well.
- Fold in raspberries and chocolate chips.
- Pour batter over crust and bake for 55-60 minutes.
- Cool completely, then refrigerate for at least 4 hours.
- For the mirror glaze: Bloom gelatin in water, heat sugar, condensed milk, and chocolate, then add gelatin and pour over chilled cheesecake.
- Let set before serving.
