Description

A decadent dessert featuring layers of velvet dark chocolate and fresh raspberry, finished with a glossy mirror glaze.


Ingredients

  • 200g dark chocolate, chopped
  • 100g fresh raspberries
  • 150ml heavy cream
  • 50g sugar
  • 2 tsp gelatin powder
  • 100ml water
  • For the base: 150g almond flour

Instructions

  1. Step 1: Melt the dark chocolate in a double boiler.
  2. Step 2: Puree the raspberries and strain to remove seeds.
  3. Step 3: Heat the cream and sugar until dissolved, then mix in the raspberry puree.
  4. Step 4: Bloom the gelatin in water and add to the mixture.
  5. Step 5: Combine with melted chocolate and pour into dome molds.
  6. Step 6: Chill in the refrigerator for 4 hours.
  7. Step 7: Prepare the mirror glaze and pour over the domes.
  8. Step 8: Let set and serve chilled.
