Ingredients

- 200g dark chocolate, chopped
- 100g fresh raspberries
- 150ml heavy cream
- 50g sugar
- 2 tsp gelatin powder
- 100ml water
- For the base: 150g almond flour
Instructions
- Step 1: Melt the dark chocolate in a double boiler.
- Step 2: Puree the raspberries and strain to remove seeds.
- Step 3: Heat the cream and sugar until dissolved, then mix in the raspberry puree.
- Step 4: Bloom the gelatin in water and add to the mixture.
- Step 5: Combine with melted chocolate and pour into dome molds.
- Step 6: Chill in the refrigerator for 4 hours.
- Step 7: Prepare the mirror glaze and pour over the domes.
- Step 8: Let set and serve chilled.
