For the Crust:
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup walnuts, roughly chopped
- 1/4 cup pure maple syrup
- 2 ounces goat cheese, crumbled
- 1 tablespoon fresh thyme leaves
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, salt, and pepper on a large baking sheet.
- Roast for 25-30 minutes, stirring halfway through, until the potatoes are tender and caramelized at the edges.
- Remove from oven and immediately drizzle with maple syrup and sprinkle with walnuts. Toss to combine. Top with crumbled goat cheese and fresh thyme before serving.
