- 4 medium sweet potatoes, peeled and cubed
- 1/4 cup pure maple syrup
- 1/2 cup walnuts, chopped
- 2 tablespoons olive oil

Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a large bowl, toss the cubed sweet potatoes with maple syrup, olive oil, salt, and black pepper until evenly coated.
- Spread the sweet potatoes on a baking sheet in a single layer. Sprinkle the chopped walnuts over the top.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.
- Remove from the oven and let cool slightly before serving. Garnish with fresh thyme if desired.
Notes
For a crispier texture, roast for an additional 5 minutes. This dish pairs well with poultry or as a vegetarian main.
