Ingredients

  • For the truffles:
  • 12 oz white chocolate, chopped
  • 1/2 cup heavy cream
  • 1/4 cup raspberry jam
  • 1 tsp raspberry extract
  • For the coating:
  • 1 cup white chocolate, melted
  • 1/4 cup cocoa powder

Instructions

  1. 1. In a heatproof bowl, melt white chocolate with heavy cream over simmering water, stirring until smooth.
  2. 2. Remove from heat and stir in raspberry jam and extract.
  3. 3. Refrigerate mixture for 1-2 hours until firm.
  4. 4. Roll into balls.
  5. 5. Dip in melted white chocolate and roll in cocoa powder.
  6. 6. Chill until set.
