Description

A crunchy mix of nuts and seeds caramelized into a brittle, ideal for winter snacking.


Ingredients

Scale
  • 1 cup mixed nuts (such as almonds, walnuts, and pecans)
  • 1/2 cup mixed seeds (such as pumpkin, sunflower, and sesame seeds)
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. In a large saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring until sugar dissolves.
  3. Add nuts and seeds to the mixture and continue cooking until the temperature reaches 300Β°F on a candy thermometer.
  4. Remove from heat and stir in butter, vanilla extract, and baking soda.
  5. Quickly pour the mixture onto the prepared baking sheet and spread evenly.
  6. Let cool completely, then break into pieces.

Notes

For a healthier version, use honey instead of corn syrup. Store in an airtight container for up to two weeks.
