Ingredients

  • For the coating: 1 cup powdered sugar

Instructions

  1. In a large bowl, cream together the butter and 1/2 cup powdered sugar until light and fluffy.
  2. Add the lemon zest and lemon juice, mixing until combined.
  3. Gradually add the flour and salt, stirring until a dough forms.
  4. Wrap the dough in plastic wrap and chill for at least 1 hour.
  5. Preheat oven to 350Β°F (175Β°C).
  6. Roll the dough into 1-inch balls and place on a baking sheet.
  7. Bake for 10-12 minutes, until edges are lightly golden.
  8. Allow cookies to cool slightly, then roll in the remaining powdered sugar.
