Description

Delicate lemon cookies that melt in your mouth.


Ingredients

Scale
  • 1 cup butter, softened
  • 1/2 cup confectioners' sugar
  • 1 teaspoon lemon extract
  • 2 cups all-purpose flour
  • 1 tablespoon lemon zest

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Beat in lemon extract.
  3. Gradually beat in flour.
  4. Stir in lemon zest.
  5. Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets.
  6. Bake at 325Β° until bottoms are lightly browned, 10-12 minutes. Cool on pans 2 minutes.
  7. Remove to wire racks to cool completely.
