Description

Delicious zucchini rounds topped with creamy goat cheese and drizzled with a sweet almond thyme honey.


Ingredients

  • 2 medium zucchinis, sliced into 1/2-inch rounds
  • 4 ounces goat cheese, softened
  • 1/4 cup honey
  • 2 tablespoons almonds, chopped
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat oven to 400Β°F and line a baking sheet with parchment paper.
  2. Brush zucchini rounds with olive oil and season with salt and pepper.
  3. Arrange on the baking sheet and bake for 10 minutes.
  4. While baking, mix honey, almonds, and thyme in a small bowl.
  5. Remove zucchini from oven, top each round with goat cheese, and drizzle with the honey mixture.
  6. Bake for an additional 5 minutes until cheese is soft.
  7. Serve immediately.
