- 2 medium zucchinis, sliced into 1/2-inch rounds
- 4 ounces goat cheese, softened
- 1/4 cup honey
- 2 tablespoons almonds, chopped
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Preheat oven to 400Β°F and line a baking sheet with parchment paper.
- Brush zucchini rounds with olive oil and season with salt and pepper.
- Arrange on the baking sheet and bake for 10 minutes.
- While baking, mix honey, almonds, and thyme in a small bowl.
- Remove zucchini from oven, top each round with goat cheese, and drizzle with the honey mixture.
- Bake for an additional 5 minutes until cheese is soft.
- Serve immediately.
