- 1 pound andouille sausage, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 bell peppers, sliced (any color)
- 3 garlic cloves, minced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 cups cooked rice (optional for serving)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sliced andouille sausage and cook until browned, about 5 minutes.
- Add the diced onion and sliced bell peppers to the skillet; cook until softened, about 5-7 minutes.
- Stir in the minced garlic, paprika, cayenne pepper, salt, and pepper; cook for another 2 minutes.
- Serve hot, optionally over cooked rice.
Notes
For a spicier dish, increase the cayenne pepper. This recipe pairs well with a side of cornbread.
