Description

A hearty one-pan meal featuring spicy andouille sausage, bell peppers, onions, and seasonings, perfect for a quick dinner.


Ingredients

  • 1 pound andouille sausage, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 bell peppers, sliced (any color)
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 cups cooked rice (optional for serving)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced andouille sausage and cook until browned, about 5 minutes.
  3. Add the diced onion and sliced bell peppers to the skillet; cook until softened, about 5-7 minutes.
  4. Stir in the minced garlic, paprika, cayenne pepper, salt, and pepper; cook for another 2 minutes.
  5. Serve hot, optionally over cooked rice.

Notes

For a spicier dish, increase the cayenne pepper. This recipe pairs well with a side of cornbread.
