Description

A refreshing salad featuring blanched asparagus, ripe tomatoes, and creamy burrata cheese, perfect for a light meal or side dish.


Ingredients

  • 1 bunch fresh asparagus, trimmed
  • 2 large heirloom tomatoes, sliced
  • 1 ball burrata cheese
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Bring a pot of salted water to a boil. Add the asparagus and blanch for 2-3 minutes until bright green and tender-crisp. Immediately transfer to an ice bath to stop cooking.
  2. Drain the asparagus and pat dry. Arrange on a serving platter with sliced tomatoes.
  3. Tear the burrata cheese and place it on top of the vegetables.
  4. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
  5. Garnish with fresh basil leaves and serve immediately.

Notes

For the best flavor, use in-season asparagus and tomatoes. This salad pairs well with grilled meats.
