- 1 bunch fresh asparagus, trimmed
- 2 large heirloom tomatoes, sliced
- 1 ball burrata cheese
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Bring a pot of salted water to a boil. Add the asparagus and blanch for 2-3 minutes until bright green and tender-crisp. Immediately transfer to an ice bath to stop cooking.
- Drain the asparagus and pat dry. Arrange on a serving platter with sliced tomatoes.
- Tear the burrata cheese and place it on top of the vegetables.
- Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
- Garnish with fresh basil leaves and serve immediately.
