  • 2 pounds chicken thighs and drumsticks
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 5 cloves garlic, minced
  • 1 teaspoon black peppercorns
  • 3 bay leaves
  • 1 cup water
  • 2 tablespoons cooking oil

Instructions

  1. In a large pot, heat the cooking oil over medium heat.
  2. Add the minced garlic and sauté until fragrant.
  3. Add the chicken pieces and brown them on all sides.
  4. Pour in the soy sauce, vinegar, water, peppercorns, and bay leaves.
  5. Bring to a boil, then reduce heat to low and simmer for 30-40 minutes until chicken is tender.

Notes

For a richer flavor, marinate the chicken in soy sauce and garlic for at least 1 hour before cooking. Adjust vinegar to taste for tanginess.
