- 4 large apples (such as Granny Smith or Honeycrisp)
- 1/2 cup crumbled feta cheese
- 1/3 cup dried cranberries
- 3 tablespoons honey, plus more for drizzling
- 1/2 teaspoon ground cinnamon
- 1/4 cup chopped walnuts (optional)
- 1 tablespoon unsalted butter, cut into small pieces
Instructions
- Preheat oven to 375°F (190°C).
- Core the apples using an apple corer or a melon baller, leaving the bottom intact to form a cup.
- In a small bowl, mix together the feta cheese, dried cranberries, honey, cinnamon, and walnuts (if using).
- Stuff the mixture evenly into the apple cavities.
- Place the stuffed apples in a baking dish. Top each apple with a small piece of butter.
- Bake for 25–30 minutes, until apples are tender but not mushy.
- Remove from oven and drizzle with additional honey before serving.
Notes
For a vegan version, substitute feta with a plant-based alternative and use maple syrup instead of honey.
