- 4 (6-ounce) cod fillets
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- For the Butter Sauce:
- 1/4 cup unsalted butter, melted
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 3 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons chopped fresh parsley
- 1 lemon, sliced into thin rounds
Instructions
- Preheat the oven to 400°F. Lightly grease a 9×13-inch baking dish.
- Pat the cod fillets dry with paper towels and season both sides with salt, black pepper, garlic powder, and smoked paprika.
- Place the cod fillets in the prepared baking dish in a single layer.
- In a small bowl, whisk together the melted butter, olive oil, minced garlic, lemon juice, lemon zest, and chopped parsley.
- Pour the butter sauce evenly over the cod fillets.
- Lay the lemon slices over and around the fish.
- Bake for 12 to 15 minutes, until the cod is opaque and flakes easily with a fork.
- Spoon the lemon-garlic butter sauce from the pan over the fish, garnish with extra parsley, and serve immediately.
Notes
Cod is done when it flakes easily with a fork. For best results, pat the fillets completely dry before seasoning. If your fillets are thicker, add 2 to 3 minutes to the baking time. You can use fresh lemon juice and zest for the brightest flavor.
