Description

This baked lemon-garlic cod with butter sauce is a light, restaurant-quality dinner made with flaky cod fillets, a rich garlic butter sauce, fresh lemon, and parsley. It comes together in about 20 minutes and is perfect for a healthy weeknight meal.

  • For the Cod:
  • 4 (6-ounce) cod fillets
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • For the Butter Sauce:
  • 1/4 cup unsalted butter, melted
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons chopped fresh parsley
  • 1 lemon, sliced into thin rounds

Instructions

  1. Preheat the oven to 400°F. Lightly grease a 9×13-inch baking dish.
  2. Pat the cod fillets dry with paper towels and season both sides with salt, black pepper, garlic powder, and smoked paprika.
  3. Place the cod fillets in the prepared baking dish in a single layer.
  4. In a small bowl, whisk together the melted butter, olive oil, minced garlic, lemon juice, lemon zest, and chopped parsley.
  5. Pour the butter sauce evenly over the cod fillets.
  6. Lay the lemon slices over and around the fish.
  7. Bake for 12 to 15 minutes, until the cod is opaque and flakes easily with a fork.
  8. Spoon the lemon-garlic butter sauce from the pan over the fish, garnish with extra parsley, and serve immediately.

Notes

Cod is done when it flakes easily with a fork. For best results, pat the fillets completely dry before seasoning. If your fillets are thicker, add 2 to 3 minutes to the baking time. You can use fresh lemon juice and zest for the brightest flavor.
