Description

This one-pan balsamic glazed chicken and orzo is topped with creamy whipped feta, roasted strawberries, and fresh basil. It’s a sweet and savory dinner that’s perfect for spring.


Ingredients

  • 1 pint (2 cups) strawberries, hulled and halved
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons Greek yogurt or sour cream
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 shallot, chopped
  • 2 cloves garlic, minced or grated
  • 1 cup dry orzo pasta
  • 2 cups low sodium chicken broth
  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped
  • salt and black pepper to taste

Instructions

  1. 1. Preheat the oven to 400°F. On a rimmed baking sheet, toss the strawberries with 1 tablespoon balsamic vinegar, 1 tablespoon honey, 1 teaspoon olive oil, and 1/4 teaspoon salt. Roast 15-20 minutes, until softened and jammy. Set aside.
  2. 2. Meanwhile, make the whipped feta. In a food processor, combine the feta, Greek yogurt, and lemon juice. Pulse until smooth and creamy. If too thick, add a tablespoon of water or olive oil. Set aside.
  3. 3. Heat 2 tablespoons olive oil in a large oven-safe skillet (12-inch) over medium-high heat. Season the chicken with salt and pepper. Add the chicken and sear 3-4 minutes per side until golden. Remove chicken to a plate.
  4. 4. To the same skillet, add the shallot and cook 1 minute. Add the garlic and orzo, cook 1 minute more. Stir in the chicken broth, 1/3 cup balsamic vinegar, 2 tablespoons honey, Dijon mustard, oregano, and red pepper flakes. Bring to a simmer.
  5. 5. Return the chicken to the skillet (along with any juices). Cover and bake 20 minutes, until orzo is tender and liquid is absorbed. Uncover and let rest 5 minutes.
  6. 6. To serve, dollop whipped feta over the orzo and chicken. Top with roasted strawberries and fresh basil. Enjoy!
