- 2 boneless skinless chicken breasts
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 pint fresh strawberries, halved
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 8 ounces burrata cheese
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix chopped basil, olive oil, salt, and pepper. Rub mixture all over chicken breasts.
- Place chicken in a baking dish and roast for 20-25 minutes until cooked through (internal temp 165°F).
- Meanwhile, toss halved strawberries with balsamic vinegar and honey. Spread on a parchment-lined baking sheet.
- Roast strawberries for 10-12 minutes until softened and slightly caramelized.
- Remove chicken from oven, let rest 5 minutes. Top with roasted strawberries and torn burrata.
- Garnish with fresh basil leaves and serve immediately.
Notes
For extra flavor, marinate the chicken in the basil oil mixture for up to 2 hours before roasting. Burrata can be substituted with fresh mozzarella if unavailable.
