Description
Grilled watermelon and feta skewers drizzled with a spicy-sweet chili-lime hot honey and fresh mint. The perfect summer appetizer or side dish.

- For the skewers:
- 1 small seedless watermelon, cut into 1-inch cubes
- 8 oz block feta cheese, cut into 1-inch cubes
- 1/2 small red onion, cut into chunks
- 2 tablespoons olive oil
- Salt and black pepper to taste
- For the chili-lime hot honey:
- 1/2 cup honey
- 2 tablespoons fresh lime juice
- 1 teaspoon red pepper flakes (or to taste)
- 1/2 teaspoon chili powder
- Pinch of salt
- For serving:
- Fresh mint leaves, chopped
Instructions
- Prepare the grill or grill pan to medium-high heat.
- In a small bowl, whisk together honey, lime juice, red pepper flakes, chili powder, and salt. Set aside.
- Thread watermelon, feta, and red onion onto skewers, alternating ingredients. Brush skewers with olive oil and season with salt and pepper.
- Grill skewers for 2-3 minutes per side, until lightly charred and feta begins to soften.
- Transfer skewers to a serving platter, drizzle with chili-lime hot honey, and sprinkle with chopped mint. Serve immediately.
Notes
If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning. For a milder heat, reduce red pepper flakes.
