Description

Grilled watermelon and feta skewers drizzled with a spicy-sweet chili-lime hot honey and fresh mint. The perfect summer appetizer or side dish.


Ingredients

  • For the skewers:
  • 1 small seedless watermelon, cut into 1-inch cubes
  • 8 oz block feta cheese, cut into 1-inch cubes
  • 1/2 small red onion, cut into chunks
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • For the chili-lime hot honey:
  • 1/2 cup honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon red pepper flakes (or to taste)
  • 1/2 teaspoon chili powder
  • Pinch of salt
  • For serving:
  • Fresh mint leaves, chopped

Instructions

  1. Prepare the grill or grill pan to medium-high heat.
  2. In a small bowl, whisk together honey, lime juice, red pepper flakes, chili powder, and salt. Set aside.
  3. Thread watermelon, feta, and red onion onto skewers, alternating ingredients. Brush skewers with olive oil and season with salt and pepper.
  4. Grill skewers for 2-3 minutes per side, until lightly charred and feta begins to soften.
  5. Transfer skewers to a serving platter, drizzle with chili-lime hot honey, and sprinkle with chopped mint. Serve immediately.

Notes

If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning. For a milder heat, reduce red pepper flakes.
