Description

A classic rhubarb crunch dessert with a sweet and tangy filling topped with a buttery oat crumble, perfect for spring gatherings.


Ingredients

  • 4 cups fresh rhubarb, diced
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 cup quick-cooking oats
  • 1 cup packed brown sugar
  • 1/2 cup melted butter
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9×13 inch baking dish.
  2. In a medium bowl, mix together rhubarb, granulated sugar, and 1/4 cup flour. Pour into the prepared baking dish.
  3. In another bowl, mix oats, brown sugar, melted butter, and cinnamon until crumbly. Sprinkle over the rhubarb mixture.
  4. Bake in the preheated oven for 40 to 50 minutes, or until the topping is golden and the rhubarb is tender.
  5. Let cool slightly before serving.

Notes

For a crispier topping, add chopped nuts like walnuts. Serve warm with vanilla ice cream.
