- 4 cups fresh rhubarb, diced
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 cup quick-cooking oats
- 1 cup packed brown sugar
- 1/2 cup melted butter
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9×13 inch baking dish.
- In a medium bowl, mix together rhubarb, granulated sugar, and 1/4 cup flour. Pour into the prepared baking dish.
- In another bowl, mix oats, brown sugar, melted butter, and cinnamon until crumbly. Sprinkle over the rhubarb mixture.
- Bake in the preheated oven for 40 to 50 minutes, or until the topping is golden and the rhubarb is tender.
- Let cool slightly before serving.
Notes
For a crispier topping, add chopped nuts like walnuts. Serve warm with vanilla ice cream.
