Description

Creamy Brie cheese is coated in a crispy pistachio crust, baked until golden, then drizzled with sweet-spicy blackberry hot honey and finished with a pop of pomegranate arils. These bite-size appetizers are the perfect balance of crunchy, creamy, sweet, and tangy.

  • For the Blackberry Hot Honey:
  • 1/2 cup blackberry jam or preserves
  • 2 tablespoons honey
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon crushed red pepper flakes
  • For the Brie Bites:
  • 8 ounces Brie cheese, chilled and cut into 1-inch cubes
  • 1 large egg, beaten
  • 1/2 cup roasted pistachios, finely chopped
  • 1/4 cup panko breadcrumbs
  • For the Topping:
  • 1/4 cup pomegranate arils

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a small saucepan over medium-low heat, combine the blackberry jam, honey, apple cider vinegar, and crushed red pepper flakes. Stir and heat until smooth and slightly bubbling, about 3 to 4 minutes. Remove from heat and set aside.
  3. In a shallow bowl, combine the finely chopped pistachios and panko breadcrumbs.
  4. Dip each cube of Brie into the beaten egg, allowing any excess to drip off, then roll in the pistachio mixture until fully coated. Place the coated Brie bites on the prepared baking sheet.
  5. Refrigerate the coated Brie bites for about 10 minutes to help them firm up.
  6. Lightly spray or brush the Brie bites with a little oil. Bake for 8 to 10 minutes, until the crust is golden and the Brie is melted and gooey.
  7. Spoon the warm blackberry hot honey over the baked Brie bites and sprinkle with pomegranate arils. Serve immediately.

Notes

Make ahead: Prepare the coated Brie bites and refrigerate up to 24 hours before baking. The blackberry hot honey can be made up to 3 days in advance and stored in an airtight container in the refrigerator. Serve warm. If the hot honey thickens upon standing, gently reheat before serving. You can substitute raspberry or fig preserves for the blackberry jam if desired.
