Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup sugar
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 1/2 cup milk
  • 1 package vanilla pudding mix
  • 1 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F and line a muffin tin with cupcake liners.
  2. In a bowl, mix flour, baking powder, and sugar.
  3. Add butter and eggs, mixing until smooth, then stir in milk.
  4. Fill cupcake liners halfway and bake for 18-20 minutes.
  5. Prepare pudding according to package instructions and let cool.
  6. Once cupcakes are cool, cut out centers and fill with pudding.
  7. Melt chocolate chips and spread over the tops of the cupcakes.
  8. Refrigerate for at least 30 minutes before serving.

Notes

For a richer flavor, use dark chocolate chips. Store leftovers in an airtight container for up to 3 days.
